Little Lady is 3!! Already!

Yes she is, I believe 3 is a magical age, they are suddenly more in control of their emotion (aka tantrums), they are chatty (all the time) and they look at the world
with exploring eyes. Above all, they have opinions, strong opinions about how things should be. Call them feisty if you will, but at 3, they are adorable.

Little Lady is true to everything above. To continue my traditions of yearly letters to the girls: Here is one dedicated to my 'chamchu'

Beautiful Chamchu,

You are my baby, the cute with puppy eyes and a whole lot of adorable attitude. No matter how old you get, you always will be my baby, my little baby. Your sister continues to be the Big Baby.
You are stubborn and headstrong but you are so so caring. You will be the first one to come and ask 'Are you okay?' kiss the boo-boo away. There are times when you drive me up the wall with the headstrong nature, but I do know you will be passionate about what you feel and why you feel. Right now it's chocolates and Mithai!

I worry sometimes when you continue to play by yourself no matter how much I coax you to play with your friends when they visit. You are happy doing what you do, and you tell me, I am playing! You are just being yourself and I do forget that from time to time. It's okay, I will back off.

Stay Affectionate

You have your preferences with people, I know that. There are some whom you jump to and could stay in their arms forever, you would cry the biggest tears at separating from them and then there are others whom you just smile and get conscious around. But I admire your courage of figuring it out on your own. Your sister adores you and would lay her life for you and I know you'd do the same for her. You help me forget any worries around sibling rivalry. Stay together, you have a best friend for life, no questions asked.

My budding foodie, Okay that may be pushing it a bit. But stay curious about food, I know you are more about how the 'food looks' than how 'it tastes'. But for me, its important you try everything Vegetarian possible under the sun. Life is a lot of fun being a vegetarian foodie, I kid you not. Bur for starters, play less with your food and eat more!

I love you and don’t ever question that. You are a wonderful bundle of joy for us. Your sister and you complete our world and I know any worries that I may have, vanish when I hear your melodious voice.
My little 3 year old monster/ prankster/ adorable munchkin. I love you, your dad loves you, your sister loves you to no bounds!!
Stay Happy, healthy and smiling takes away all the worries possible.
Love,

Mummy

Chicago Summer Delights: Vegetarian Grilling

If there is one time I see Sumit really content cooking is at the Grill. At the onset of summer, we finally bought our grill and it’s been a super duper hit. Making us ask ourselves: 'Why did we wait for so long?'

A few of our evenings are spent grilling and chilling on our deck. The kids can play with bubbles; we happily chat after a long day at work with the delicious smells of the grill food, relax and enjoy the city view!

Here was the super appropriate gift for him this 'Father's day':

As we explore this grilling journey, we are realizing there are not many recipes out there outside of vegetarian burgers, grilled vegetables with salt and peppers. As foodie's out here, that is great but definitely not enough.
So I introduce another tag today' Vegetarian Grilling'

Hence we are exploring and experimenting. Some success and some failures.

Here is one of the recipes: Spinach & Kale Stuffed Peppers:

Vegetarian Grilling Recipe
The best part of this, they follow my rule of 'Quick Food Fix'

Spinach & Kale Stuffed Peppers:
1. 3 to 4 peppers: Here are used the sweet peppers and split in half, feel free to use regular peppers and take the cap off.
2. Spinach- 1 bunch
3. 2 to 3 Kale Leaves destalked
4. 1/2 cup of frozen corn
5. Goat Cheese: About 1/2 cup
6. Spices: Dried Oregano leaves, Red pepper Flakes, Saunf/ Fennel Seeds, Salt- to taste

Recipe:
1. On a pan, on medium heat, add 2 tsp of olive oil, add the fennel seeds
2. Add finely chopped spinach and kale leaves. Saute for 2-3 minutes
3. Add spices and corn. Saute for 1-2 minutes
4. Add 1 tsp of goat cheese and switch off the gas.
5. Stuff the split peppers with the spinach Saute, top with goat cheese and take it to the grill
6. Grill for 5 minutes till smoky
7. ENJOY!

This definitely is what a cool dad looks like!!!

Buddy System

Ever since we were kids, the concept of 'buddy system' existed. Going to the loo in a restaurant, take a buddy. Getting punished in class for being naughty, a buddy gets out with you. In college, the partying night, have a buddy. And then in life as you progress, the buddy system continues.

And it’s a good system to have. There is someone who is accompanying you, has your back and above all: is there.

Why should the "Getting Fit" journey be any different?

For me, Getting Fit is not about losing weight (though it would be an added plus and it is a good indicator), it’s about being active, doing things without being out of breath and above all, being able to enjoy the food without feeling like a glutton. Considering that I am self proclaimed vegetarian foodie and over 50% of my posts are recipes, the last part is really important for me, enjoying the food

Among-st all-the-things-I-have-tried, MyFitness Pal has worked out for me.

Have I lost oodles and oodles of weight, hell no. But do I feel better, stronger and above all more in control of my body. Hell Yes. But I know I have a long way to go still!

For me, its about small steps, so in order to progress and continue this journey, I am doing a buddy system for different elements of the 'Getting Fit' business...

So now I have a buddy, a friend who I nudge and she nudges to continue tracking, just logging what we eat. Every single day. Simple.

So now I have a buddy, my hubby who is competing with me to get to a particular number by year end.

So now I have a buddy, a friend who is my 'workout partner' and we encourage each other to go for another 10 minutes through the class.

So buddy up,  keep logging, keep moving and keep enjoying the process.

Above All continue to Get Fit.

Another successful Munch Bunch, Theme: Greek

This time for the Munch Bunch, the theme was Greek. Since I was responsible for one main, I started
hunting for intresting recipes, Surprisingly, it was very Vegetarian friendly. I generally order the
same two things in any greek restraunt. But I was amazed to find such a lovely variety of dishes with
simple steps and complicated flavors.
Here was the menu of the evening:
Drink:
Greek Tiger
Appetisers:
Zuccini Fritters with Tatziki,
Chips and Tirokafteri
Mains:
Spanikopita Lasagne
Peppers with Feta
Dessert:
Cookies
Pannacotta
Yumm Yummm Yummm,,

I wanted to try my hand at dolmades. But the steps scared me away and I will stick to ordering that in
restraunts. I made: Peppers with Feta cheese and 'tirokafteri' a spicy cheese dip.
Here is my take of simplifying the already simple recipes

1. Peppers with Feta CheeseIngredients:Sweet Peppers: 30 medium size
Jalapeno peppers: 2 sliced length wise
Tomatoes : 4 large, (recipe called for grated but I used my foood processer for chunky peices)
Feta cheese:  250g  crumbled- Store baught package
Garlic: 5 cloves, finely chopped. We all love garlicy flavor in food
Basil leaves: 1 bunch, finely chopped
2 tbsp olive oil
Salt to taste
Steps1. Wash the peppers, deseed them and cut them lenght wise.
2. Set them on trays for drying.
3. Heat olive ould and fry the peppers. Peppers will sizzle as soon as put them. Remove from oil when
they look slightly soft.
(Since the original recipe called for frying, I stuck to it. The next time, I am planning to broil them
for making it healthier)
4. Lay the fried pepper in an oven dish and sprinkle salt to taste (I used sea salt)
5. Layer with garlic, the crushed tomatos and the sliced jalapeno peppers.
6. Add salt to taste, but not too much as the feta cheese is rather salty.
7. Sprinkle the olive oil and basil on top.
8. Finally, sprinkle the crumbled feta cheese on top.
9. Bake in the over at 350 F for approx. 20 minutes, until the liquid has been absorbed and the feta
browns a bit.
10. Eat Hot!!!!
Notes: Since this dish calls for only salt, ensure the Feta is good quality so to render good taste.
I am happy to report, that the peppers dissappeared really quickly and my friend M worded it perfectly,
its smoky to tase and so easy on the tongue. I could not agree more.
As an Indian, I love spice in my food, but for once, with the simplicity of flavors in this dish, it
was perfect. No additional 'hot sauce'needed.
Adapted from here

2. Next dip I tried was 'Tirokafteri' a spicy cheese dip.
Though I didnt have to make anything for the appetisers, this recipe looked really simple and since I
had never eaten it, the foodie in me wanted to make and eat it.
Please note, the dip is heavy, cheesy and spicy! So yes, perfect.
IngredientsJalapeno: 1
Thai Chilli: 3-4 (depends on your spice level). Finely chopped
Feta cheese: 250 gm
Greek anthotiro cheese: 125g. I went to three stores and still didnt find it. I used the Ricotta Cheese
as replacement that the original recipe called for
2 teaspoonfuls lemon juice
100ml extra virgin olive oil
Steps:1. Wash the jalapeno and the chillis.
2. Put all the cheeses and peppers in a blender and mix.
Note: I added some milk for assisting the blending process
3. You might have to add salt to adjust seasoning.
4. Add lemon juice
The consistency should be of a thick yogurt.
Garnish with olive oil and enjoy!
This worked really well with the Zucini Fritters that M had prepared and the chips. In all due honesty,
I ate it with all the mains!! Hehe, Yes it did turn out creamy and yummy at the same time.

It was a wonderful Munch Bunch which got topped off by some Cut Throat Mafia at the end of the evening.
Next month: Theme:  Guys cooking. I am looking forward for our girls spa session as the boys dish out
stuff. They need to ONLY make 2 Appetisers, 2 Mains, Drink, Dessert

I cant wait!

Monday Bites

I have been looking for an outlet for my recipes: My Quick Fixes. I enjoy cooking thoroughly and don’t like to spend hours cooking as well. Hmm... Hence the balance: Quick Fix: And plus, the lesser time you spend, chances of you making it healthier are higher. Don’t ask me why... but I have noticed it in my cooking. Now due to lack of creative options: I am starting it right here: Monday Bites.
Aim: To post at least bi-monthly for some quick creative recipe I experimented with. Or I ate at a friend's place.
Reason: I am a foodie and I enjoy a few dishes and the simplicity of cooking them.
Purpose: Just to share!

So here is my first Monday Bite of Quick Fix: I guess my previous two posts: Apple Cobbler and Stuffed Peppers fit in well as well.

It is no secret that I am a snacker. And it is also no secret that I "try" to cook healthy => Olive Oil, bare minimum cheese and even lesser of fried food. And it is no secret that I looooove Namkeen- The bhujia, the chivda's and the category of super marwadi snacks.
This Paryushan, I have quit fried food at home => No eating anything fried at home... which implies: Yes I can come over to your house and eat. :-) But seriously, it is good, it will keep my unhealthy snacking in control. Or that’s the plan
Now how this fit in my Monday Bite does: I made "Cereal Chivda": No frying, 2 tsp of olive oil and it was super yummy!

Name: yummy Namkeen (Per my daughter)
Time to cook: 10-15 minutes (If you using out of box cereal which I use)
Ingredients
3 cups each toasted rice cereal or 6 cups thin poha
2-3 fresh chilies (I used jalapeño)
2 tsp Olive oil (Feel free to use any other oil of your preference)
1 teaspoon Rai
1/4 cup roasted unsalted peanuts
1/4 cup roasted unsalted Chana (Feel free to use almonds/ cashews/ walnuts)
1/4 cup raisins or dried cranberries if you like the sweet-spice flavor
2 tablespoons lime juice
1 teaspoon sugar : Optional. I recommend adding it, it gives a nice combination flavor.
1 teaspoon salt
Few curry Patta leaves (optional)
Spice: Red Chili Powder, Amchoor, Haldi

Steps to bliss:
1. Spread poha in a 12- by 17-inch baking pan. Bake in a 200º regular or convection oven, stirring occasionally, until flakes are very crisp, about 20 minutes.
If using the cereals, omit this step. I have always made it with Rice Crispies. It reduces one step for the lazy me.
You can also add any other cereal you like, mix and match for variation. I have tried Honey Oats, Cheerios, Wheat Bran, Kellogs original etc.
2. Meanwhile, rinse and dry chilies. Chop finely (do not seed).
3. Pour oil into a 5- to 6-quart pan over medium-high heat; when hot, add rai and stir until they begin to brown, about 30 seconds.
4. Add chilies and stir for 1 minute. Add Kadhi Patta until crisp. About 30 seconds
5. Add peanuts, and any other nut, raisins, cranberries etc. Stir until fruit is puffy, about 1 minute. Add lime juice, salt, red chili powder, amchoor and turmeric; stir until blended. Add sugar if you like.
6. Reduce heat to medium. Add poha/ cereal/ Any other cereal and stir until completely infused with spiced oil and golden throughout, about 6 minutes.
---- You can add dried Nariyal flakes.
7. Let mix cool completely. Serve or wrap airtight.
8. Enjoy

Next time you make a batch... mix and match.
Example: Rice Crispies + Peanuts + Raisins
Cheerios + Kellogs Original + Dried Cranberries + Chana
Wheat Bran + Raisins + Cheerios + Walnuts + Almonds
With the nuts you add, it makes it high in protein> Being vegetarian and not liking Daal as much, this really helps!

Cook Away!
